I was trying to contact ffmpeg about this, just to bug them about it, but they don't have a forum, just a mailing list (many, in fact; I didn't know which one to subscribe to in order to send my message)
I don't know if this is of any help, but some time ago I used this program (http://www.calcitapp.com/AVIAddXSubs.php) to pack subtitles in an avi file and the copy that file to PS3. it worked fine. the subtitle add process was pretty fast if I recall. maybe this principle could be used to pack subtitles in Serviio to be streamed to PS3. however, nowadays I'm playing mostly hi-rez mkv's from a Synology NAS, and the above method is obsolete...
again, crossing fingers! maybe Serviio's developers could find a way to make subtitles available to PS3. that would be a big step forward.
It probably does not support it
