PS3 transcoding stuttering

NOTE: I've searched the forum and found several similar posts, but most don't have a clear (to me, at least) resolution and end up with the Mod asking for detailed file/log info particular to the case. So I'm just going to go ahead and describe my problem and give all the relevant data I can.
It seems that it is a common enough problem. I'm using a PS3 as a rendering device and it is "stuttering" on many videos. The problem isn't limited to only MKV files and it seems that sometimes the video is issue and sometimes the audio.
First I am running the Serviio (1.4.1.2) server on my MacBook Pro:
It is a wired network.
I can't list info for every file I have an issue with so I guess I'll choose the most recent I've had problems with (let me know if it a bad example for some reason).
In this case the audio plays flawlessly while the video just speed skips between stills:

Is it a hardware issue? can my MBP just not handle transcoding on the fly? It says the transcoding is finished, but I'm not clear on all the details of the process.
FYI, I tried deleting the STF file before selecting the file for the purposes of detail logging, but it still says "A suitable transcoding job already exists".
