What are you running Serviio on - a PC?, which operating system?
The purist may hate this advice but one thing you may want to try (as a work around until fixed) is running another media server on the same PC as Serviio - if using Windows simply enable streaming from Windows Media Server (see

Once enabled your Panasonic should show two media servers - one for Windows (WMP, which you can ignore) and one for Serviio. The idea here is that the appearance of the WMP server will hold the Panasonic Media Server screen up long enough for Serviio to be detected (can take a while) and displayed.
Let me know if this helps and if it does, how long roughly it is taking for Serviio to appear.
ps. Serviio's appearance in the Pana Media Server screen shouldn't be effected by what profile you select. Stay with the Panasonic Viera G/GT/DT/UT/VT (2011/2012) profile.
