Since the XMB on the Playstation 3 already sorts out Photo-Video-Music, is it possible to add a feature to not have the separate folders server side? I'm not sure about the logistics but it should be possible in theory?

I don't think it's possible. I presume Serviio knows nothing about it when you select Video on XMB and cannot therefore return appropriate subset of browse categories.
