default transcode all profile

Similar to the Generic profile which transcodes nothing, another generic profile that basically transcodes everything. this could be very useful in a trouble shooting situation where you are trying to figure out what streams with and without transcoding.

OK but, what is the output format that do you want to used ?

I was thinking about this, it could be easily tweakable via config.
But for those less inclined. When you transcode the format is almost always mpeg2 so you could include two or three profiles with differing audio options to try and cover most devices out there.
