I'm looking for some tool/SW/whatever that could help in analysing what a stream from a DLNA-server actually is.

I want to see what tags are there, what they contain, what streams, any characteristics of the containers and streams and tags and all...

Will MediaInfo and GSpot ACTUALLY analyze a video stream from a DLNA server?

yep, use AV MEdia Controller, get the resource URI and use FFmpeg like:

ffmpeg -i <url>
