I would like to ask whether the Downmix to stereo audio option actually DOES include the LFE channel in the stereo downmix, so the Left and Right channels both have the LFE audio channel blend in...

If not, will it be in scope for a next release, or do you know of any other DLNA server software that provides this very functionality please?

Even in a 5.1 setup the LFE is a separate channel, if you have no sub you don't get the LFE, it isn't mixed into the rest of the mix as far as I'm aware. I'd assume the same for stereo downmix.

I'm not sure if FFmpeg supportes it. You can check the ffmpeg command that is used and ask at the ffmpeg forum / mailing list.
