Also, my system has an i7 3.0Ghz 4 Core with 16G of RAM, is that really something that should be getting bogged down while transcoding?

I certainly wouldn't think so. That should be a great transcoding machine. I've never tried transcoding H.265 to anything else, so no idea what sort of power it actually requires. But I'm pretty sure burning subtitles takes a lot of power.
