Retrieve metadata in certain language

How does this work? For example, this file: My.Series.3x17.title.FR.avi has the "FR" tag which means it's in french. Will Serviio recognize that and fetch a french title? Should it say "français"?

You can select the language in the console, on Metadata tab. It's not per file.

What does it do? Because the console language is changed in the console setting tab

Console language and metadata language are two different settings.

a naming in the File Name to select the Language would be cool....
Something similar to Season / Episode in the TV-Series (S01E01)
Something like L_DE / L_EN /L_FR

Ew, sounds like a dirty hack to me. Why don't you retrieve the meta data in a different language using some kind of tool which is capable of XBMC nfo files?
If you use nfo files, you're in control!

It'll load french metadata (title, description, etc) from the online databases, if available.

No, it'll use the language as selected in the console.
