Try with INTEL Device Spy tool (see signature link upnp) or wireshark.

What version of AcePlayer are you using & have you been able to stream any MP4 videos? I've tried both the Generic profile as well as the one you posted but regardless of which I use, I can't get AcePlayer to play videos.

The only thing that I've noticed is that when I'm browsing a list of video files with Serviio using AcePlayer, I see Icons with "video" with a red background at the top of the icon. If I look at the same list of video files using PS3 Media Server, I see a Quicktime icon ("QT" with a blue background).

It seems like PS3 Media Server may be sending some information about the file that Serviio isn't?

I have version 2.0 of the AcePlayer ( AcePlayer gone from iTunes ????).
If I browse for DNLA servers I can see my whs 2011 and Serviio.
Whs shows correct icons in aceplayer for Mkv avi mic and mp4's, and it plays avi mov and mp4.
With Serviio all videos have avi type icon and mp4 can not be played.
Any directions or hints would be most appreciated.
What would be the best iTunes app to play all formats on the iPad from Serviio?

I am using version 2.0. And you are correct in your statements. It would be nice to have an iPad/iPhone profile in Serviio native in the selection list.
