iPad User - bit of a noob - help required

Hi guys
I've had a look around but up until now I've not needed to delve into this too much.
I have various devices around the home (TV's, Android etc) that I use a DLNA client on to stream movies (MKV 720p mostly) from Serviio running on my machine (always on).
That's been absolutely fine (even running on my Galaxy Nexus device) until I got an iPad 3. It seems that I can't play some files from some players and that on the apps I can (Powerplayer for example) it stutters and the like.
I was looking at the Console and saw the profiles to which my TV is set to Samsung etc...however my iPad has a generic profile. Now whilst I don't know anything about profiles, I'm assuming that the profile basically tells Serviio what to do to best deliver media to a particular device, correct? If so, can I create a profile for iPad and tell it to dumb the quality down so I can get it to play back properly?
Anyone wanna point me in the right direction?
