In fact I probably turned the renderer setup menu temporarily off.
I now figured that the hostname is tight to this menu setting.
If the hostname gets not assigned, Serviio has a problem with automatic profiling. That you have to do manually towards this "unknown" client . That would be OK - I guess.
I ran into another issue when having this manual configuration working:
In case you don't have a reserved IP for your TV on the router, that above manual client/profile setting is no longer pointing to the right device
as soon as the TV gets a new IP address.
With the generic profile assigned to the new/old detected unknown client obviously steaming to my Bravia won't work anymore.
Unfortunately you'll notice it first time as soon as you try to access the data from the TV. "No video available"

I'm wondering if it would be possible to identify a TV/client by MAC address or any other unique ID. That would solve the potential problems associated to uncontrolled change of IP addresses and associated mix-up or assignment of generic profiles.
As a workaround I could reserve an IP address on the router (that's what I've done now) to avoid this problem.
But not everybody will do that... ...and might get frustrated about it (and Serviio).
Man. Lots of traps out there.
