Panasonic L47-ET60E

I apologize in advance if you posted somewhere else these info but I am really new in the TV/DLNA world and I do not even know how to find the info I need.
I have just bought a new TV, the Panasonic L47-ET60E. I installed Serviio on Mac and it works great.
My issue is that not always I have the correct format for the video I want to watch I guess. I mean that sometimes it works perfectly and sometimes it says that the video is not supported. For the subtitles is ok. in the MKV files it let me choose in the options if I want the subtitles, while for the other formats I have to rename and move the srt files into the same folder of the film, as I read in the instructions.
I would like to know in which format I have to convert my files to be sure that I can see them on my tv with serviio. The file has to be in the right format for serviio or the format supported by my tv?
Could you please indicate also a software that works great for it? I use handbrake for the mac but I do not know how to configure all the settings to be sure the video is in the righ format.
Last question..... I saw inside serviio that there is a transcoding option... I am really nood in this world, sorry but what does it exactly? It convert in the right format to be seen? there are preset for it?
