Need a simple solution please

I have looked through the FAQ and read some of the wiki but what I actually want to do may be to simple for this program let me quickly explain.

We live in a small bungalow and our DVD collection was taking up too much space so I ripped the entire collection both movies and series then put the disks away. I have three hard drives with films, series and music on a windows vista machine, this also doubles as our main media tv, now Serviio seemed like the perfect system to allow our tablets, computers and phones around the house to draw on that media system but it may be too complicated for what I want.

This is what I want:
Every device capable in the home to be able to connect to the media drives yes this works fine.
I just want to see on each device a list of the folders AND the files in there, that is it.
No director name no media info no series link none of that because I already organized all my files in series folders.

My problem is even if I tweak the settings in Serviio it is missing half of the subfolders and gives me useless categories.

So my question is this can I setup Serviio to read those three drives as folders with contents that other devices can read so I can just scroll down a list of folders open on and play a movie or episode, if that is possible please point me to the place that tells me how to do it.

In the Serviio console you can individually disable the various categories from being displayed.
Using Serviio on Debian "Wheezy" with Xbox 360, Sony BDP-S370 & Panasonic E6.
