I'm installing a packet sniffer so I can compare exactly how the Samsung is communicating with Twonky vs Serviio.

by all means my friend go ahead any try but so far i have benn unable to to find a reason why it fails on the BDPs yet it works perfectly on the TVs..

Just remove the DeviceDescription block, leave the others. That should enable you to keep subtitles.
