Suggestion for (Linux) transcoding from mpeg2 to mpeg4/h264

Hi.

I'm using serviio to serve up files to my new Sony TV. I want to convert my DVD library into an appropriate format for that rather than use the old DVD which only has analog outputs.

Anyway, I want to preserve the ability to have different sound tracks and subtitle tracks etc, and in my TV this is supported in MKV format. However, not when the internal video codec is MPEG2, which is what DVDs usually have. It needs to be H264/MPEG4/Xvid.

So, the question boils down to - given that I'm not a video expert and I don't know much about bitrates and the like, but I can use Linux quite well from command line, and given that I've already ripped the DVD into MKV using MakeMKV, what would be a good, quality preserving way to convert just the video channel to H264/MPEG4/Xvid?
