That unfortunately is going to be a computer setting, nothing to do with Serviio. Since it's Windows, you can open the Settings/System/Sound menu (assuming Windows 11, as that's what I'm checking it on) and choose where the sound is played. Right now on my laptop only has one option, the internal speakers. But when I turn on my Air Pods (Bluetooth connection) they appear as a selection. Normally my laptop switched to the headphones (Air Pods) automatically, but I can't say if that's happening on yours and I see no setting to make it an auto select.
[EDIT] Wait, I think I misunderstood. Unless Windows recognizes your Networked devices as an audio playback device, you can't tell MediaBrowser specifically to play the audio there. MB is strictly a web browser based player and not a DLNA casting device, and can only play the audio where the computer is configured to play.
