I have had issues in the past when updating Serviio or Java (mainly Java).
If I just run the Java 64-bit installer on my PC, on rebooting I get errors and Serviio fails to start up. I then have to reinstall Java 64-bit again and it works after another reboot. It seems the best policy when updating Java is to close the Serviio console and stop the service. Then install the Java update, and reboot. It seems Serviio "locks" some of the Java files, but the Java updater does not realise.
With the last Serviio update I also had problems. I installed it and the Serviio console did not start up. The Serviio service was running as ServiDroid could see it. When I looked into it, the Serviio entry in Start Up menu was there, but the short cut was actually missing! I then checked the bin folder for Serviio and there were files in it with corrupted and invalid names (foreign characters and symbols). I removed Serviio completely (which actually crashed the uninstaller) and did a manual clean up and reinstalled it. It has been fine ever since.
